Best approach to custom formatting tables

Hi,

I'm new to the Galaxy theme as my first Gantry based project. I am upgrading an existing non-responsive website and before proceeding would like some advice on the best approach.

In the existing Joomla articles are a number of informative tables which are rendering perfectly well using the default table styling. However there are sections where much larger tables are used to deliver competition results and these are not rendering in an acceptable manner.

For example the table content on this page is OK:
http://ccwdev.electricfarm.co.uk/entering/cowes-resources

But the competition results table content on this page needs adapting:
http://ccwdev.electricfarm.co.uk/the-regatta/archives/2016-results-archive/610-ccw-2016-results-xod-1

The competition tables are generated by a local desktop application that outputs HTML. This HTML is then uploaded/imported into Joomla using a third party extension as a Joomla article with a defined Joomla category, which is then checked and published.

So my question is, what would be your recommended approach in Galaxy/Gantry to apply custom table styling to all the articles published to a specific category, leaving the table styling in articles outside of that category unchanged?
