I'm not sure I understand what you mean.

You simply have two completely independent installations - one on localhost and one on the live server.
So you just update them independently/separately.
If you update the localhost installation, nothing will be changed/updated/affected on the live server. And vise-versa - if you update the live installation, nothing will be changed/updated/affected on the localhost installation.

It is highly recommended to update your test/localhost installation first, make sure that everything's fine, and only then update your production website (on the live server).

Actually, this is close to what I'm looking to do. How do I upload/sync changes from my localhost/test server to the live site?

There are many tutorials on Google. Just search for "move joomla from localhost to server"

Or probably the easiest and best way is to use Akeeba Backup.
You can find the Akeeba Backup documentation here, but what will be most helpful for you are these video tutorials and especially the Restoring a Site on a New Server video.

I actually know how to move a Joomla site from local to live server. I don't know how else to say it but I'm looking at a method to simplify management and maintenance on live sites.

Usually with my WP sites, it's easier to make changes on a local site and get approval from clients and then just sync the only the changes to the live site using ServerPress' WPSiteSync tool. This way, only the updated changes are made to the site without having to replace the entire live site. What would you recommend for a Gantry5 based Joomla site?

Anyway, I'm not familiar with WPSiteSync and I also do not know of an extension that can do that in Joomla.
The best thing you can do is to search on Google or open a new discussion in the Official Joomla Forum.

In my 9 years experience with Joomla I've never heard of such thing.
I've always been updating the localhost/test/development installation first and then doing the same with the production/live installation.
Yes, it means that you have to do the same thing twice, but after all those are two completely different/independent installations with different databases, etc.

I don't know Julius, it would be great if you can find such an extension, I'm just not aware of such thing and cannot help you here.

I update client websites for them and It would be too much work to do if I have to do it twice and still go out looking for new clients.
